Grilled
Salmon Sandwich with Spinach and Brie
1 213 g/7.5
oz can Western Family pink salmon, drained
30 mL green bell pepper, fi nely chopped 2 tbsp
125 mL fresh spinach, chopped ½ cup
30 mL Western Family light mayonnaise 2 tbsp
2 whole grain pita bread or
slices of Naan bread
120 g Brie cheese, thinly sliced 4 oz
pepper to taste
1.
Preheat broiler.
2. Combine
salmon with green pepper, spinach, and
mayonnaise in a bowl and
blend well.
3. Place
bread slices on a baking sheet and top with thin slices
of Brie. Spread salmon mixture
over the Brie.
4. Broil
sandwiches 4" (10 cm) from heat for about 7 minutes or until lightly
browned and bubbling hot. Season with pepper. Slice open-faced sandwiches in
half diagonally and serve immediately.
