Bruschetta Pizza
2 398 mL/14 oz cans diced plum tomatoes, drained
15 mL (1 tbsp) minced garlic
30 mL (2 tbsp) thinly sliced green onion
75 mL (1/3 cup) chopped fresh basil
5 mL (1 tsp) lemon juice
75 mL (1/3 cup) Western Family olive oil
salt and pepper to taste
1 12"/30cm Western Family thin crust pizza crust
175 mL (3/4 cup) shredded Western Family partly skim mozzarella

Preheat the barbecue medium heat.

Combine tomatoes, garlic, green onions, basil, lemon juice and salt and pepper in a bowl. Set aside.

Brush the pizza crust with olive oil and transfer to a clean cutting board or pizza pan to bring out to the barbecue. Place crust (oil side down) on the grill. Brush the other side of the crust with olive oil. Flip the crust after approximately 3 minutes using a steel barbecue utensil such as a spatula.

Spread the shredded cheese over the pizza crust, followed by the bruschetta mixture. Cover and cook for 10 to 12 minutes, checking the bottom of the pizza frequently for doneness. When it turns golden brown it should be ready. Remove the pizza carefully with the aid of barbecue utensils and let cool for 10 minutes before slicing and serving.
